Whole Wheat Chicken Tacos

Whole Wheat Chicken Tacos

Serves:

Preparation/Cook Time:
20-30 mins

Ingredients you will need:
Chicken, either pre cooked fajita meat, canned chicken, or you can use fresh grilled chicken seasoned however you like.
garlic
garlic salt
salt
chili powder
black beans
minute brown rice
4 whole wheat tortillas
cheese
sour cream if desired
1 can rotel


Directions:
I threw these together one day, and they were really good. I usually use pre cooked fajita chicken from tyson, but you can use any chicken you like. You cook the chicken until done of course. Cook rice on stove or in microwave. You want enough for four tacos, which is usually 2 servings of cooked rice. Just put salt in the rice. Heat up the tortillas until warm either in microwave or oven. You can heat up the beans, but it isn't neccassary. Take tortillas and add desired amount of each ingredient (excluding the seasonings). Enjoy!

Garlic Grilled Chicken

Garlic Grilled Chicken

Serves:
3-4

Preparation/Cook Time:
30 mins or so

Ingredients you will need:
Chicken breast tenderloin
garlic powder
garlic salt
salt
extra virgin olive oil

Directions:
Take skillet and heat up enough EVOO to coat bottom of large skillet. Prepare chicken tenderloins with desired amount of seasonings, and cook until done. I use either the george forman grill in which case I DO NOT use EVOO, or I use a griddle/pan with grill marks which I do use EVOO. Cook until chicken is done.
Serve with wild rice, or veggies and mashed potatoes.

Easy Chicken Quesadillas

Name of Recipe: Chicken Quesadillas (I made this up myself)
Serves: 3
Preparation/Cook Time: 20 mins or so
Ingredients you will need:
1 can rotel
6 whole wheat or white tortillas
1/2 bag or less of cheese
canned chicken breast
black beans if desired
sour cream for dipping
garlic salt
salt
garlic powder
chili powder

Directions:
Take alluminum foil, lay enough out to put one tortilla on. Lay tortilla on foil and cover with desired amount of cheese. Take canned chicken and put in skillet. Add seasonings as desired, and cook until hot. Lay chicken on top of cheese on tortilla, and layer desired amount of rotel, beans, and top it off with more cheese, and a tortilla on top. Do this for however many quesadillas you want to make. Put in oven and bake at 425 for about 10 minutes, or until cheese is melted and tortilla is a bit crunchy. Serve sliced in quarters with salsa or sour cream.

Ranch Chicken

Well I missed the part about doing one type of ingredient a week, I apologize for the chickenless fruit pizza in my first post.

Here is some chicken!! I dont eat meat so I cant ever taste it but I hear its great!

Name of recipe Ranch Chicken
Serves 4-6
Ingredients 1 to 2 lbs of boneless chicken
1 bottle Ranch dressing
1/4 cup Parmesan cheese
1/2 to 1 cup Shredded cheddar cheese
1 tsp flour
Directions
Heat oven to 375.
Mix dressing, flour, and parm cheese in bowl, once well blended add to chicken.
Place chicken in oven for 20 to 30 mins. Add cheddar cheese for last 5 -10 mins.

Fruit Pizza

Skill Level (easy, medium, hard):easy

Name of Recipe:Fruit pizza

Serves:8-10

Preparation/Cook Time:30 mins

Ingredients you will need:
2 pkgs cream cheese
1 tsp vanilla
1 roll refrigerated sugar cookie dough
1/2 cup sugar
pizza pan (i use disposable)
assorted sliced fruit.
suggestions:kiwi, banana, strawberry, fresh cherries

Directions:
Spread cookie dough flat onto pizza pan, bake as directed on package.
Mix softened cream cheese, vanilla, and sugar in bowl until well blended.
Spread cream cheese mixture over cooled cookie crust.
Top with fruit in circles. Serve or chill in refrigerator.

Edit: I forgot about the chocolate. You would get bakers chocolate and follow directions for melting, once melted drizzle on top of pizza.

Mexican Chicken

Skill Level (easy, medium, hard): EASY

Name of Recipe:
SANDRA'S MEXICAN CHICKEN

Serves:
About 6

Preparation/Cook Time:
20 Mins to prepare, 45 mins to cook. 1 hour 5 minutes total.

Ingredients you will need:

    1 package chicken

    one cup of chicken broth (from boiled chicken)

    one cup of milk

    one can of cream of mushroom soup

    one can of cream of chicken soup

    one can of rotel
 
    bag of doritos, enough to cover bottom of pan

Directions:

boil chicken in water (add salt)

let chicken cool (do not drain)

crush doritoes in the bottom of a baking pan

tear chicken into edible size pieces and cover the doritoes

in a separate bowl mix the following, then add to the pan

    one cup of chicken broth (from boiled chicken)

    one cup of milk

    one can of cream of mushroom soup

    one can of cream of chicken soup

    one can of rotel

cover with cheese and bake

Cook at:
375
For:
45 Minutes or until cheese is brown.
