Hey everyone! One of the mods here.

Can everyone please go back and tag their posts with the ingredient of the recipes you're posting?
That way new members can find a recipe, or we can all go to the tags for ideas.
I think this should be a requirement on all of the posts! :)

Alright. This is kind of lame, but if you want plain rice as a side dish, this is super easy.

Skill Level (easy, medium, hard): Easy

Name of Recipe:
Flavored Rice

Serves:
Any

Preparation/Cook Time:
10 minutes +

Ingredients you will need:
Bouillon Cubes or Swanson Broth

Directions:
I usually make the brown rice you stick in the microwave for 10 minutes, and put swanson broth or bouillon cubes in the water while it's cooking. You can either use all broth, or half water half broth, whatever you choose. Or throw bouillon cubes in the water while it's cooking.
Otherwise if you're making the rice on the stove, substitue broth for some of the water.
Just heat, maybe add butter and salt, and serve. It's plain, but it's good if you like plain rice. :)

Indgredients:
2 c. cooked black beans
1 c. crumbled firm tofu
1/4 tsp. cumin
2 cloves garlic, minced
1 jalapeno, minced
1 onion, diced
1 tbsp. olive oil

Directions:
Saute onion, jalapeno, garlic and cumin in olive oil. Add black beans and tofu, simmer for 5-10 minutes. To assemble, heat tortillas over open flame, then fill with bean mixture. Top with diced tomatoes, cilantro, grated Jack cheese, diced avocado, chopped lettuce and other taco toppings you like.

I found the recipe on cooks.com, which says to use corn tortillas but we like flour tortillas and we dont like cilantro either.

Lasagna

Name of Recipe: Lasagna

Serves: 6

Preparation/Cook Time: Total 1 hr 35 min

Ingredients you will need:
1 lb. ground beef
2-1/2 cups KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided
1 container (15 oz.) POLLY-O Natural Part Skim Ricotta Cheese
1/2 cup KRAFT 100% Grated Parmesan Cheese, divided
1/4 cup chopped fresh parsley
1 egg, lightly beaten
1 jar (26 oz.) spaghetti sauce
1 cup water
12 lasagna noodles, uncooked

Directions:
PREHEAT oven to 350°F. Brown meat in large skillet on medium-high heat. Meanwhile, mix 1-1/4 cups of the mozzarella cheese, the ricotta cheese, 1/4 cup of the Parmesan cheese, the parsley and egg until well blended; set aside.
DRAIN meat; return to skillet. Stir in spaghetti sauce. Pour water into empty sauce jar; cover and shake well. Add to skillet; stir until well blended.
SPREAD 1 cup of the meat sauce onto bottom of 13x9-inch baking dish; top with layers of 3 lasagna noodles, 1/3 of the ricotta cheese mixture and 1 cup of the meat sauce. Repeat layers two more times. Top with remaining 3 noodles and the remaining meat sauce. Sprinkle with remaining 1-1/4 cups mozzarella cheese and remaining 1/4 cup Parmesan cheese. Cover tightly with greased foil.
BAKE 45 min. Remove foil; continue baking 15 min. or until heated through. Let stand 15 min. before cutting to serve.

Meatloaf

Serves:
4-6

Preparation/Cook Time:
1 hour or so

Ingredients you will need:

2lbs ground beef
1 onion
parsley to taste
garlic powder to taste
garlic salt to taste
salt to taste
1 egg

Directions:
Chop onions into small peices, and combine all ingredients into a mixing bowl and mix together until everything sticks well enough to be formed into a pan. Put mix into baking pan, corningware is best.

Cook at:
350-375 (This is a homemade recipe, and I don't quite remember what temp to put it on.
For:
about 45 mins.

Taco Salad

Yummy taco salad with ground beef also good with Boca ground burger

Ingredients:
1 lb ground beef or boca burger
olive oil
1 envelope taco seasoning
1 10 oz. can kidney beans
1 c. grape tomatoes, halved
1 head lettuce, shredded
1 12 oz pkg. shredded cheddar cheese
1 12 oz bag nacho cheese flavored Doritos, crushed
1 16 oz. bottle Italian salad dressing

directions:
Brown ground beef in olive oil and drain. Add taco seasoning. Simmer according to directions. Place in large bowl and refrigerate until cool. Add beans, tomatoes, lettuce, cheese, and Doritos. Mix well.

Cover with salad dressing. Mix again. Serve almost immediately.

Mandarin Pasta Salad

Name of Recipe: Mandarin Pasta Salad

Serves: 4

Preparation/Cook Time: around 30 minutes

Ingredients you will need:
Dressing:
1 teaspoon finely chopped, peeled fresh gingerroot
1/3 cup rice vinegar or white wine vinegar
1/4 cup orange juice
1/4 cup vegetable oil
1 teaspoon sesame oil
1 envelope Lipton® Recipe Secrets® Onion Soup Mix
2 teaspoons sugar
1 garlic clove, pressed

Salad:
8 ounces uncooked bow tie pasta
1/2 cucumber, scored, seeded and sliced
1/2 cup diced red bell pepper
1/2 cup coarsely chopped red onion
1 package (6 ounces) fresh baby spinach leaves
1 can (11 ounces) mandarin orange segments, drained
2 cups diced cooked chicken
1/2 cup sliced almonds, toasted

Directions:
1. For dressing, finely chop gingerroot. In a small bowl, combine gingerroot, vinegar, orange juice, vegetable oil, sesame oil, soup mix, sugar and garlic (pressed in a garlic press); whisk until well blended. Cover; refrigerate until ready to use.

2. For salad, cook pasta according to package directions; drain and rinse under cold running water. Place pasta in a large bowl.

3. Meanwhile, score cucumber and remove seeds. Slice cucumber and cut slices in half. Dice bell pepper. Coarsely chop onion.

4. Add cucumber, bell pepper, onion, spinach, mandarin oranges, chicken and almonds to pasta. Pour dressing over salad and toss. Serve immediately.
